1/4 of the Way!




Well one week down so we are quarter of the way there, that week has gone fast for me. I have managed to avoid a visit to the supermarket so far, there are a few things I am low on but that just heightens the creativity in my experience. This morning ‘s project was to cut the timber for an outside workbench,  so in a couple of days the recipes will come from the deck. I got some plans from my bro so the thing does not turn out wonky, I notice the cuts are not all dead square so it may need some aftermarket loving from someone with a few more saw skills than I.

Zoom drinks with some friends turned into two hours last night, someone suggested a quiz night on Saturday, I found myself thinking “quiz ….bugger off” and then I thought, hang on what else am I going to do. There was some hilarity working out how it would work, I reckon it is shaping up to be chaos! Ohawe Ukes are having their first Zoom meeting tonight that will also be interesting. No doubt we will all be vastly upskilled in the realm of video conferencing by the time this is over.

Another bucket of plum wine is underway and breakfast took some time to think about and make, I now release I forgot the photo, anyway here is the recipe, if you wanted to un-vegetarian it you could add choritzo sausage or bacon. 


Spiced Beans and Baked Eggs
3 cloves garlic, peeled and sliced
1 dried chilli
1 t salt
1 t peppercorns
1 t smoked paprika
½ t paprika
1 t sugar
½ a red onion, sliced
500g chopped tomatoes
2 D Jude's tommy sauce
Juice of ½ a lemon
1 tin butter beans
Oil
Eggs
Cream cheese

Put the first 7 ingredients in a mortar and pestle and grind up. Fry the onion in the oil and add the spice mix, tomatoes, sauce, lemon juice and the brine from the beans. Cook over a low heat for 30 minutes, use the back of a spoon to squash the tomatoes up a bit. Once reduced to a thickish sauce add the beans and heat through. Spoon some of the mixture into warm single serve heatproof dishes, I use baby cast iron frying pans. Break an egg into each one and dot some cream cheese around. Cook in the oven 180 degrees for about 8 minutes until eggs are cooked. Serve with Grainy bread. Will serve three.
 
 Alarming Thought #1: God forbid I catch the virus and lose my sense of taste and smell, this blog could get interesting then. Good reason to be vigilant!



And back on the basil theme here are a couple of goodies from dinner a few nights ago.


Lemon & Basil Potato
§       4 medium potatoes peeled and quartered
§       Juice of a lemon
§       Oil
§       A handful of grated grana padano or parmesan
§      1 t of honey
§       Salt & pepper
Par boil the potatoes then mix with the lemon juice an hold for a couple of hours
Pan fry in the oil and pack into an oven proof dish.
Mix together the cheese, honey, salt and pepper, sprinkle over the potato and bake in the oven until browned


Chicken with Tarragon and Onion
§      200g boneless chicken thighs, cut into 3
§      ½ an onion, sliced
§       A handful fresh tarragon, roughly chopped
§       Salt & pepper
§       Garlic butter
§       Iceberg lettuce, sliced
Pan fry the chicken in the garlic butter, add the onion after a few minutes, when nearly cooked add the tarragon, season with S&P.
Serve on a bed of iceberg lettuce with lemon & basil potato

A quick soup, best I can do in a short timeframe

  Hot & Sour Soup 500g shark 1 packet mild Singapore laksa paste (I know I know I know, but sometimes needs must) 1 t salted shrimp 1 t tamarind 2 T of the oil leftover from spicy smoked mussels ½ an onion peeled and finely diced 4 cloves garlic peeled and finely diced 1 thumb ginger peeled and finely diced 2 silverbeet leaves or other leafy green 1 tin coconut cream 500 g fish stock 2 serves noodles I used ramen 1/4 cup fresh lime juice Fry the onion, garlic and ginger in the oil, add the spice paste, salted shrimp and tamarind stir it all around until it is cooked a bit then add the fish and cook for 5 minutes then add the stock and simmer for 10 minutes. When you are ready to serve it add the coconut cream, bring to boil again then add the noodles,  when boiling yet again add the silverbeet or greens. Once wilted turn off and add the lime juice.

I received a delivery of jam, the fruit was left in the bowl at Kidsbarn for lockdown so Emma knocked up a batch of jam with it, I scored a bottle on the proviso it appeared on the blog so this is what I did.  I based in on a recipe from a book called Harbour Kitchens which was a fundraiser many years ago for the schools in Lyttleton. There is a classic recipe from the witt of Joe Bennett for fish and chips if you can get your hands on a copy.  This is an adaptation of the Lemon Yoghurt Cake by Jane Simmons. False Pretences Cake  Zest of 2 lemons 1 ¾ C sugar 2 eggs Juice of half a lemon 4/5 C of greek yoghurt Half a jar of orange, pineapple and kiwifruit or other jam ¾ C oil 2 1.2 C flour 2 large t baking powder  Line a largish tin with baking paper, I lined a smallish tin, then had too much mixture, so I lined another tin spooned the rest of the mix into that and it was too big!
