still, not much work to do, Yay! Quite a bit of dicking around trying to work
out how to do a live stream on Facebook for the council but it turned out
pretty good in the end.
This came
from the magnificent Diana Henry’s Salt Sugar Smoke it is quite something, I
will be spooning it from the jar like the Wiked PB.
Pumpkin Agar
1kg pumpkin peeled and cut into small dice.
1 onion
25g ginger
6 garlic cloves
2 chillies
200ml oil
1 t turmeric
3 T mustard seeds
3 T mustard powder
2 t pepper
1 T salt
225ml vinegar
300g sugar
Blast the onion, ginger, chilli, ginger and most of the oil in the food
processor, fry the mixture gently in the rest of the oil for 10 minutes, add
the other ingredients and cook until sugar is dissolved. Allow to cool.
Add the pumpkin pieces to boiling water, once back on the boil time 90
seconds and remove them. Cool in cold water and lay out on a tea towel to dry.
Reheat mixture, add pumpkin, bring to the boil and bottle in sterilized jars.

Oooh, gotta try this when I have 6million pumpkins in a coupla weeks!!!
