The Bread Issue

Emma manages to disguise her domestic goddess status quite well, but when you watch her in her kitchen, cooking is effortless, she appears to be drinking wine and talking bullshit and the next minute dinner appears. Any number of extra people can show up at the last minute, this is never a drama in fact she appears not to even notice , she waves her magic wand and there is sufficient food for all. Nevertheless I have given her several sourdough starters and she has killed them all, but the lock down one is different as she has had the time to research how to look after it. So overnight she has turned into Queen of the Sourdough, her recipe is adapted from the Tassajara Bread Book, and thanks goes to Val Harrison for the starter.

½ C sourdough starter
2 C flour
1 C water
Mix together and leave to rise over night.
Add
2 t salt
½ c sugar
¼ C oil
2 C flour
½ C tepid water
Add seeds, bran, spices, raisins etc depending on what flavour you like.
Knead, prove in tines for approx. 2-4 hours
Cook at 180 until cooked.

Dylan is an engineer and therefore knows everything, he is shit hot at fixing things and building stuff but has never had a reputation for his prowess in the kitchen, except for at the coffee machine. He, like a whole lot of other people has had time to bake bread. I sent him my Jo’s bread recipe initially and he has adapted it so it works from him, this is loaf #14, he tells me he proves it on his coffee machine.

325ml warm water
Add large tsp honey and 1x sachet/1 tsp yeast, sit 10 minutes or til fluffy.
In a bowl, 4 cups flour, 1.5 tsp salt, splash oil, 1/4 cup sesame seeds if you have them. Rosemary and oregano is good too.
Fold in with a wooden spoon, scraping the sides as you go until raggedy mess then knead in the bowl til smooth.
Hold somewhere warm til doubled, 2 hrs or so.
Knock it back a bit more, put it in a greased deep casserole dish with a lid. Sit for another half an hour.
Optional; wet the top with water then sprinkle on sesame/poppy seeds/whatever you like.
Cook 180, 25mins with the lid on, then take off the lid and bake for another 15-20 mins.

Emma is a dyed in the wool, 24 caret, gold plated, undeniable domestic goddess. She really deals up the goodness, get the kids in the kitchen and is a master of a whole raft of healthy options. Kimchi, pickles, kombucha, sourkraut and sourdough feature regularly at Emma’s place. She made these sourdough muffins getting the kids in the mix of course.
200 G sourdough starter
2 T honey
2 C milk
4 C flour
Mix together and leave overnight
1 1/3 C wholemeal flour
100g raisins
3 t cinnamon
1 t allspice
1/2 t nutmeg
2 t salt
Knock back dough which must of least doubled in size. The add remaining ingredients, the flour bit by bit, add more flour if too sticky. Once the four is added knead for 10 minutes, roll out to 1 cm thick than cut into circles using crumpet rings. Dust a baking tray with semolina or fine polenta and place the muffins on the tray. Cover with a tea towel and leave to rise, at least an hour until doubles in size. Fry in a little ghee.

Sadly she is also just another mum traumatised by her kids during lockdown, but she has sensibly taken the time to deliver drink pouring classes as part of her home school regime. Ok here is the thing, my key performance indicator, to use corporate wank language is how much fun I am having. I have had three rules for many years. 1. Don't hang out with shit people.  2. A quick soup, best I can do in a short timeframe

  Hot & Sour Soup 500g shark 1 packet mild Singapore laksa paste (I know I know I know, but sometimes needs must) 1 t salted shrimp 1 t tamarind 2 T of the oil leftover from spicy smoked mussels ½ an onion peeled and finely diced 4 cloves garlic peeled and finely diced 1 thumb ginger peeled and finely diced 2 silverbeet leaves or other leafy green 1 tin coconut cream 500 g fish stock 2 serves noodles I used ramen 1/4 cup fresh lime juice Fry the onion, garlic and ginger in the oil, add the spice paste, salted shrimp and tamarind stir it all around until it is cooked a bit then add the fish and cook for 5 minutes then add the stock and simmer for 10 minutes. When you are ready to serve it add the coconut cream, bring to boil again then add the noodles,  when boiling yet again add the silverbeet or greens. Once wilted turn off and add the lime juice.

Give a cake a go day.

I received a delivery of jam, the fruit was left in the bowl at Kidsbarn for lockdown so Emma knocked up a batch of jam with it, I scored a bottle on the proviso it appeared on the blog so this is what I did.  I based in on a recipe from a book called Harbour Kitchens which was a fundraiser many years ago for the schools in Lyttleton. There is a classic recipe from the witt of Joe Bennett for fish and chips if you can get your hands on a copy.  This is an adaptation of the Lemon Yoghurt Cake by Jane Simmons.
