I have made these Turkish eggs before and they are really good, it is a Peter Gordon recipe from the book Spice by Natasha MacAller. I married them up with Mexican staple guacamole and it worked really well, you could sub the tomatoes out with bacon or sausages for a carnivorous edition.
A combination of cultures for breakfast
For one
70ml Greek yoghurt
½ clove garlic finely sliced
2 T olive oil
½ t butter
½ t sliced chilli
½ t dill
2 Eggs
A couple of T of guacamole
2 tomatoes
A tortilla
Put the tomatoes in the oven to roast. Mix half the oil, yoghurt and garlic together, hold. Fry the chilli in the butter until crisp, add the rest of the oil and the dill, hold. Once the tomatoes are cooked, poach the eggs, serve them over the yoghurt, with the tomatoes and guacamole I the side and drizzle with the chilli, dill and oil. Eat with a toasted tortilla.
